Jeremy,
  The height of the cam lobes is really in-material!.  
  What matters is the difference between the height of the cam lobe at the
apex of the lobe and the height of the "heel"  of the cam( that portion of
the cam lobe directly opposite of the apex of the lobe.  This difference is
known technically as lift.
  In the case of reground perfromance cams, more material is taken off the
heel of the lobe than the apex, thus generating more lift. For "stock " cams,
equal amounts are removed in the grinding process for approx. "stock" lift.
  Measuring the height of the lobes from the surface of the shaft would be of
use only if you have the measurments of THAT cam when it was new, so as to
check for wear.  But it would take a dial indicator to really be accurate.
