If at all possible, paint the panels separately--this will insure all
flanges get coated.

If you're planning on the thick Ziebart style undercoating, I'd advise
not doing, unless you're sure this car is never going to see salt. The
tar-based undercoating dries out, cracks, and provides lots of places
for water to hide. If this is going to be a sunny weather/show car, I
wouldn't undercoat it at all.
