Required:

  Radiator hoses
  Fix-a-flat
  Extra wire for those emergency Lucas patch jobs

Recommended:

  Emergency CB radio (does Australia have the equivalent of CB?)
  Someone else mentioned checking your spare; also make sure your jack 
    works right.  Another good thing to carry if you have room is a
    wide flat piece of wood in case the ground is too soft to support
    the jack & car.
