In addition to the heater control valve on the heater coil, you should also
have a valve on the right side of the block which you can manually close. with
both valves closed the flow of hot water should be stopped. Stopping the flow
to the heater should not affect the coolant flow thru the block. If you remove
the lines you will of course have to plug the holes in the firewall. If you
are concerned about originality & you are concerned about heat being conducted
in the water (even with no flow) you might consider leaving the hoses in place
& plugging them under the dash.
