They aren't supposed to be "very brittle" ... perhaps you've been buying
cheap imitations ?
I would also hazard a guess that Chris uses a "torque limited" impact
wrench, he doesn't just hit the easy-out with 250 ftlbs of torque. And he
did say to use the straight-flute type, which are to be driven into place
with a hammer (hence can't be very brittle).
I'll agree that I've rarely had any luck with easy-outs, I usually skip
directly to other methods. However, just the other day I was removing a
water fitting from a GT6 intake manifold, and wound up using an
easy-out-like pipe extractor on the remains of the banjo bolt. After
putting enough torque on it with a T-handle that I thought it was likely to
break, I tried putting an impact wrench on it. It actually worked quite
well ... and the extractor is still in my toolbox.
