     Should I use some type of anti-seize on the bleeder screw and the brake
     line when I reassemble them?

Sure, sparing use of some compuond on these threads can help down the road.
Given that the brake line will likely be staying put, teflon tape will work
on those threads if you have any.  On the bleed screw, which will be moved on
occasion, standard copper or aluminum anti-seize greases would be best.

A lot of these fitting get corroded into place, due to dissimilar metals, water
seeping in around the tops of the fittings, and 'mechanics' who believe the
threads do the actual sealing and think if tight is good, tighter is better.
