There are several companies that still offer those "universal fit"
aftermarket systems.  One such is

Another is 
http://www.classicair.com

They even show an air conditioned Lotus/Caterham 7 !

FWIW, IMO, your problem won't be power enough to pull the compressor; but
rather how to get rid of the excess heat, both from the AC condensor and the
extra heat from the engine (from making that extra power).

One solution that might be attractive would be to find the condensor
assembly from a 70-71 Audi 100LS, which was mounted above the rear axle and
cooled by electric fans.  But it wasn't a very powerful system, so maybe not
useful in an open car.
