I mounted a video camera in my car at Bonneville one year and found that my
major problem was vibration. I used a mounting system that clamped onto the
roll cage so the camera felt every bump, growl and engine/chassis vibration.
The sound went out part way through the  second run and I had to buy a new
camera (which I did NOT put in the car!). I should have used some foam or
something to isolate it better. Also, the backlighting from the salt glare
sort of washed out the outside picture. And I had to pick whether I wanted
to focus on the gauges or the outside. Videos are a great idea, I just never
got it to work very well.
