But again, we are not talking about mass production (we already know that is
why complete wheels are so relatively cheap), we are talking about hand
assembly by a local mechanic.

Otherwise, very good points.

As Bill pointed out, respoking a wheel yourself might bring a feeling of
accomplishment, and at least the labor would be free. But you simply can't
afford to do it buying spokes at retail. That is what is rather galling -- I
mean, a lot of people build their own engines (starting with the long block,
equivalent to starting with the rim and hub), buying pistons, rings, cams,
etc. at retail, without having it cost 4X what it would to buy a completely
rebuilt one from a manufacturer.
