I put my ceiling at 16 feet.  In the back of the shop I built a loft using 
2x12 floor joist.  This gives me a 7' 6" ceiling on both levels.  I have 
office and storage upstairs and the wood/metal shop below.  I'm adding a 
26x54 addition on the side for more storage...you never build them big 
enough.  I will now have 4,500 square feet of shop.
