Ok, so in the SU, the piston changes the airflow area and the venturi size in
a fixed relationship.  Bigger airflow opening, bigger venturi size.
In the Weber/Mikuni/Solex, the opening size is fixed and the air velocity is
variable and the amount of fuel drawn out is dependent on air velocity via
Bernoulli.
Does this mean that the air velocity is maintained constant by the rising
piston in the SU carb?
Or is that still a variable that works in conjunction with a variable ventury
size to meter fuel?

  The area of the air passage changes in both SUs and
  Weber/Mikuni/Solex-type carbs; the difference is that the SU's piston
  moves in response to airflow to change the area available to airflow,
  and in the Weber/Mikuni/Solex carbs the butterfly is moved mechanically
  to achieve the same effect.
