This is a real tough nut to crack without an agreed value policy.... Perhaps 
you have a 
letter from your club stating the value? An appraisal of any kind? A bill of 
sale? 
Reciepts for all your parts? 

It's very hard to put a value on a car that's not there.

Is there annother route you can claim? If it was stolen from your garage 
perhaps you 
could claim it on your homeowner's policy? Maybe even if it wasn't stolen from 
your 
garage?
