Where are the best places to lift a Spitfire body off
the chassis?
I have a GT6 factory manual that shows using hooks on
the cowl (that'll work for the Spit, too) and a beam
under the roof (that ain't gonna work with the soft
top).
So, just use a sling around the rear right behind the
rear wheel openings?

Since the Spit body is significantly lighter than the GT6, after you
remove the doors and trunk lid, you should be able to lift it off with
two able bodied individuals, forget those Slings (and arrows of
outrageous fortune).
